
We awoke crazy early and left the hotel in Pisac, Peru around 4 a.m. for the second time that week. Uff da. All was pin-drop silent within the van as we rattled around for 3 hours in the dark, until finally reaching the Andes town of Asangate. The air was thin, and the land relatively treeless, but the snowcapped Andes loomed around us, and it was beautiful in a volcanic and desolate way. After a simple breakfast with our hotel host’s extended family, the horses were gathered, the alpacas were fed, and off we rambled until my butt and thighs ached. Our guide pulled my horse in the lead, and all I had to do was sit there and watch the scenery filled with enormous herds of alpacas and llamas. The destination: Seven Lakes Asangate at 15,000 feet.

We dismounted here and took a short, oxygen canister fueled walk around the lakes amid rugged mountain peeks.

Soup for Mosaic Monday. Hours later, and after untold miles on horseback, we returned to the tiny town and ate lunch. I loved the quinoa soup so much I recreated the recipe at home and shared it with my travel partners. Left: Peru soup. Top right: mine. Bottom right: my friend Karen’s version. Try it for yourself!

Yum! Simmer until the vegtables are tender and the quinoa is soft and fluffy. You can fiddle with the ratios. I proably used more than a cup of carrots. I like to send them through a food processor until they are tiny bits that sweeten the broth.
