We visited Mankato, Minnesota a couple times this summer, once before my surgery to bike the Red Jacket Trail and once after just to get out of the house. The highlight is always the taco pizza at Jakes Stadium Pizza. We eat it at super stinky Sibley Park. There’s a soybean processing plant next door that wafts funk 24-7 into the surrounding grounds. Luckily if you have a picnic behind a hillside near the convergence of the Minnesota and Blue Earth rivers, you’re fine. Phew! We always visit the St. Peter Food Co-op, and roam around Minneopa State Park, where there’s a herd of buffalo. Sometimes, we walk at Seven Mile Creek County Park, and this year, it was the first place I walked after tentitively taking off my cast boot after surgery. Ouch! Follow my feet…
